Amaranth (from the Greek word amarantos meaning 'never-fading flower') is an extremely attractive and useful plant with a colourful history.

It was a staple diet among pre-Columbian Aztecs, who believed it had supernatural powers. Fact is, amaranth has excellent nutritional properties.

A nutritious, whole grain, gluten free food, amaranth is a good source of high-quality protein, dietary fibre and valuable nutrients.

It has a unique, mild-toasted flavour and 'soft crunch' texture that adds character to breads, cookies, cereals, stuffing, snacks and breading.
